If you are anything like me, you’re probably at least thinking about all the yummy food all of us will eat next Thursday. Maybe some of you have even made your grocery lists and prepped your homes for guests. This Thanksgiving will be a little different for the Lovejoy’s. No family is coming in town to visit, and we aren’t traveling anywhere. Yep, way different. But, don’t feel sorry for us. We won’t be lonely. Since the kids are out of school for the entire week, we’re actually looking forward to a few shopping days, seeing a movie, and yes, an intimate lunch on Thursday. A quiet week could be just what the doctor ordered.
Which brings me to the reason for this post. You see, since I won’t be cooking for guests, I’m tempted to try something new. And, if it bombs…..well, my hubby can simply order out.
So, help me out. What are YOU making for your Thanksgiving meal? Tell me what your favorite side dish, dessert, bread, or even what your appetizer is. I’ll get you started. Here’s my favorite side dish – a spin on the traditional mashed potatoes.
Green Onion and Bacon Mashed Potatoes:
4 large baking potatoes, peeled & cut into 2″ pieces
2 cups (8 oz) shredded Colby-Monterey Jack cheese
6-8 bacon slices, cooked and crumbled
2 garlic cloves pressed
1/2 cup sour cream
1/4 cup softened butter
1 1/2 tsp salt
1/2 tsp pepper
Boil potatoes until tender. Drain and then mash. Stir in remaining ingredients.
To lighten: Use shredded mexican cheese blend, reduced fat bacon, fat-free sour cream, and reduce butter to 2 tbsp.
